You may have noticed some eggs float in fresh water, while others don't and have wondered what this means for egg quality. Eggs have an air cell that becomes larger as the egg ages and acts as a buoyancy aid. An egg can float in water when its air cell has enlarged sufficiently to keep it buoyant. Boil eggs 12 minutes. Remove from water with tongues, place in glass bowl. Refrigerate 2 hours! Older eggs will float but that doesn't mean they're bad. If I know I have to make deviled eggs for a party I'll set aside the amount
